Veganuary may be one of the worst catchphrases coined (it ain’t no sober October), but it’s still a good opportunity to challenge your regular eating habits.

More and more people concerned with their own health and the health of the planet are looking to follow a plant-based lifestyle. As a fledgeling vegetarian, I can attest as to how difficult this is, and how the world is really not set up for non-meat eaters.

I frickin’ love pancakes and would have them every day if I had the patience to make them. And while they seem like a sinful childhood treat, there are plenty of ways to make pancakes that are actually pretty healthy.
